Garri – It is a popular food across West Africa, made from cassava tubers mashed, sieved and fried in a large clay frying pot with or without palm oil. The dry granular garri can be stored for long periods. It could be served as Eba (stiff dough made by soaking garri in hot water) with traditional soup or drank in cold water as snack. Yellow garri is fried with palm oil hence the colour while others are linked with where they were produced for example Ijebu and Ghana respectively.
